Steelhead eggs
« on: January 13, 2019, 05:03:17 PM »

Got a hatch doe today. About 10 lbs. The eggs are very small in the skein compared to the chum roe I typically keep, cure, and fish with. I guess I’ve always cured up my Steelhead roe and used it to fish with at some point, but I question the effectiveness of these eggs for Steelhead fishing as compared to the highly sought after chum roe. And since I have plenty of chum berries in the freezer this year I thought I would post on here before I put the Pro-cure to them - and ask - does anyone have a recipe or other advice as to how to prepare Steelhead roe for consumption? Thanks - Jk

If it were me, I would use them over the next three days as fresh roe. Place chunks in a roe bag. Works for me. Always make sure to puncture a berry or two before it hits the water.

:-[ If only my next 3 days were to be spent fishing instead of working! They’ve been out on the counter for a couple hours so I’m running out of time if I’m to consume them... will be curing them in an hour or so if no ideas pop up here, but would still be interested for next time

Borax up the skeins and throw them in a ziplock bag in the fridge. Comes time to fish cut them up into bait loop size and throw them in a Ziplock bag with Borax. Shake the bag throw it in the vest and your good to go. Will last about two weeks in the fridge.

An easy cure is the classic "3-2-1".

Ingredients:
3 parts Borax
2 parts Sugar (white)
1 part Non-Iodized Salt (Kosher or Sea Salt)

Steps:
Mix the 3 ingredients well. Prep Skeins by butterflying them, cut up into whatever sizes you want.
Coat both sides of the eggs with cure. Make sure everything is covered but don't need to drown them in cure.
Toss in a large Ziploc bag and mix them around gently so cure gets into all the eggs/skein.
Put in the Fridge for 24 hours (turn them a few times throughout that time, whenever you think to).
After 24 hours, add any Dyes or Scents you want (e.g. Cherry Powered Kool-aid for dark red coloring, Liquid oil scents like Anise, Shrimp, etc.)
Mix around all the scents and oils in the Ziploc and put back into the fridge for another 24-48 hours.
They're ready to fish or put a jar and freeze. If you're fishing them right away and the eggs feel a little wet/soft, coat them in borax overnight.
Because of the high sugar & salt content in this cure it's difficult for these eggs to get freezer burnt.

you will be pleasantly surprised how good of caviar they make!
