Store Bought Roe

Stupid Questions: how long does store bought fishing roe last? does it have to be refrigerated after open?  ??? ???

Always make my own, freeze it all in small bags, only taking out what I need for that day. I don't see why you can't do that with the store stuff.

honestly, you can freeze it and defrost it as many times as you want until it turns in to roe jerky. After all, you're not eating the stuff so who cares...

I'd say thaw it out and then use it within a week.  Or leave it frozen for a year or more.  Keep refrigerated when not in the freezer. You can probably keep cured roe in the fridge for a couple of weeks or even longer, but I try and aim for one week.  Good luck.

What kind of roe are you talking about? The ones come in a vacuum sealed package? My recommendation is to get boraxed roe from Berry's Bait and Tackle if you want to buy some. You can refreeze it a few times if needed. Maximum time in the fridge should be one week, as suggested by FM.

i found one of those jars in my garage from 10years ago, the lid is rusty but the eggs look mint.

Under no circumstances should you freeze roe. When you freeze it , the eggs break  and it turns to a gooey mess . I've never bought roe that was much good. I usually cure it then put it in canning  jars or any jar you have handy  leave at least an inch from top of jar then put a piece of wax paper or any paper then 
light the paper on fire. , then screw the lid on quickly, while the paper is still burning , you'll see the flame go out cause all the oxygen has burnt off. You can remove roe from the jar too, just enough for the day , then re-seal the jar. And put it back in the fridge. Or you can buy a vacuum packer , and put the packages in the fridge, not freezer.

Been curing and freezing roe for years. Never had a problem of the gooey mess.

Correct me if I am wrong, but vacuum packing unfrozen roe will squeeze and burst lots of eggs, turning it into juice. I usually wrap my cured roe, freeze it, then take it out a day later and vacuum pack it. This goes back into the freezer and only taken out when you want to use it. I usually take it out the night before fishing and it is ready to be used by first light. If cured and dried properly, it'll remain firm instead of a gooey mess after taken out from the freezer.
