smokers
« on: September 12, 2005, 05:47:51 PM »

Well my dear wife has decided to let me get a smoker.  I am leaning to a Bradley.  As she has a thing for lox's.  Does anyone have any other recommendations

If you are spending that kind of money stick with the Bradley. I have a Big Chief but next year I am going to buy a Bradley. The pucks are pretty expensive but its a beautiful thing.

The Bradley is probably the creme de la creme of smokers right now. I have a Big Chief. Serves my needs nicely.

You can get what looks to be a decent insulated smoker at Princess Auto right now for $149 ish I believe.

Bradleys are great but don't make the mistake of believing that it can do cold smoked lox on its own.  The smoker gets a bit too warm inside (even during the winter) to make lox properly.  What I do is pipe the smoke into another box or chamber giving time for the smoke to cool before it hits your salmon.  The temperature should be preferably at or below room temperature for lox.  Any temp greater than 100 F will start the cooking process. The great thing about the bradley is that you can increase the temperature even more as you smoke which will allow you to smoke other things like chicken and turkeys or have your smoke salmon cook quicker.

That looks interesting. Do you know if they carry that model in Canada?
