Nice fresh ingredients. I like the use of mango.

For our fish tacos, I also make a chipotle crema with canned chipotle peppers in adobo sauce, either sour cream or plain yogurt, and squeezed lime. Makes a real nice crema that gives the taco a smoky, spicy pop.

Baja fish tacos with fresh rockfish or lingcod are simply the best!  When we get inspired, we'll even make our own flour tortillas, spicy yogurt and mango salsa.  Deeeeeeeeelish!
