where do you live Fly Fisher ?? I may be able to just show you how its done. its not really to hard however it takes practice to not snap the thread when you pull tight to make it spin. I will try to explain how i do it, this was shown to me at M&Y when i started tying muddlers. I hate deer hair though cause its very messy

have tying thread on your hook
cut a decent amount of hair of the hide. this depends on how much you want obviously
put into a hair stacker to make the tips all even. this means put the tips into the stacker so the cut ends stick out the top
tap a few times to even them out
pull out the insert part slightly and then give another gentle tap. this will help make it easier to grab the hairs out of the stacker
take out stacked hair, line it up to where you want it so the length is good
hold it tightly in the clump while you put 2 LOOSE wraps around the hair. you want them loose but still around the hair so it stays put when you pull
next just pull down, STRAIGHT down. thisshould spin the entire stack but you may have to shift some of it around with your fingers. once its even around or however you want it then add some tighter wraps and voila !! have fun trimming all those ends
