We've had a bradley smoker for about 2 months .Have a few questions.  When we smoke we've been using the smoker for the entire smoke should we be only smoking for 2 - 3 hours then just use the oven for the next 2 - 3 hours?  Also we have the temp going between 140 - 180 can't seem to control it...any suggestions?   Also cold smoke?   Do we just use the generator and not the oven???? How does that work on the Bradley????

I don't have a digital bradley so not sure how to control the temp on that model but with the standard one there is a sliding heat control on the bottom of the unit.  If you want to get the temp down try opening up the vent more.  Also smoking in colder weather and with large quantities will help to keep the temp down.  I haven't tried it yet but I hear some guys put ice in the water bowl.  To cold smoke you will need to build a secondary unit attached to a dryer hose to pump the smoke into it.  This allows the smoke to cool down enough to allow cold smoking.  Or you can buy one designed by Bradley http://www.amazon.com/Bradley-BCOLD-Smoker-Smoke-Adapter/dp/B001Q3LO1E/ref=sr_1_2?ie=UTF8&s=home-garden&qid=1254583919&sr=8-2.  There is a wealth of information on the Bradley forums about smoking I highly recommend having a look and experimenting with smoking different things other than fish...  I made a smoked turkey once (finished off in the oven) that was great. http://forum.bradleysmoker.com/  and here http://www.susanminor.org/ .  Most people smoke feed the smoke for the first 3-4 hrs only but that is entirely up to you.  Using less smoke should also help to keep the temp down.

I built a cold smoking attachment a few years ago that I have used many times.  It looks similiar to the Bradley version, uses the same type metal duct.  I modified a cheap metal toolbox, cut out one side for the smoke generator to go into, and attached the duct to the top.  Works great.  Have some pix of it on my puter at work, will post them next week.  Why pay $100 when you can make one for $25??
