Anyone knows how to prepare salmon roe like those in Japanese restaurant?

If you do a search for Ikura you'll get all sorts of answers that have been posted here. ;)

Natural Procure or Borax will work.

But if you rinse them in salted water you can eat them yourself.

Okay thanks guys.  Will do some research under ikura.  Wouldn't salt water dehydrate the eggs and make it kind of tough?

No, just a light salt water rinse to put a shine on and to slightly firm the outer for easy spoon handling.
