My wife or sometimes my brother-in-law (our beloved nanny fr. Philippines) baked them using their own recipe.
I would say there is no difference  in terms of taste between a fresh pink and fresh chum (even with bars on them) salmon when baked properly.
I actually landed 4 chums yesterday and picked the best one. ;D ;D ;D

yeah i picked the one with sea lice but really when i tried to clean that up oh god theeeeeeeeeee smellllllllll uh uh uh

Here is the trick, look at the belly and use these rhymes.

For smoking:

White is right
Gray is okay
But if it's black throw it back

For the table:

If the sides are bright out of sight,
If it's white it's still alright

Unable to even hold the baitcaster today due to sudden influx of patients @ clinic :( >:(
Be back @ Stave on my usual spot Monday and try to perfect the skill of shortfloating :D
