2nd vote for the SJ4000 cams.
A fraction of the price to GoPro's but just as good.
I know several people that use one for fishing and the images and video are great.

Based on your recommendations and some further research I ended up ordering the SJ4000 camera.
I ordered it from ebay for $30 with free shipping and am actually pretty excited to give it a go. For the price of two six-packs you can't really go wrong lol. Meanwhile I got a friend's GoPro Hero4 to play around with while I get the knockoff delivered.
Cheers

The SJ cam is pretty ok.  I tried one.  It was the 5000+.  It is better than gopro 3 but not as good as the newest gopro but you are not paying for all that much.  The only problem with them SJ camera, battery doesn't last.  People with gopro knows you have short battery life.  The SJcam is even worse.

But for $30.00, you can't go wrong.  The SJcam website sells the 4000 for $99.00.

It does take an amazing photo for a phone. I use my iPhone 5 but it's no where as good as the 6.
