The Socs are sure coloured up, must be stressful on the fish with all the c&r going on for a silver one.   :(

When I was working at the Canadian Fish Co while attending university they were canning Fraser sockeyes which were coloured.  Fetched top prices.

Don't forget that's a month later than the usual sockeye fishery.  I've got 2 silver ones and 2 slightly coloured ones in 2 days of fishing and there has been zero difference in flesh quality.  It's probably got something to do with how far they've got to go.  Fish on the way to Quesnel systems are probably a little more silvery still then say, Adams fish or closer systems.  Either way, they are still extremely tasty and excellent quality.

Even the coloured up Sox have sea lice on them.  Some just change a bit earlier different physiologies - Like people.

The meat is still prime.

Well, I decided to take my sister out today (been years since that happened) and we got 3 bullet chromers with lice and one pinkish sockeye.  So the really fresh ones are still there, just intermixed with the colouring ones.  Slow start to the morning I must say, but it picked up around 11 am.  Cheers.   :)

Great to hear there are still chromers coming up.  Found the coloured ones very slimy compared to the silver ones but you guys were right, great tasting!  All set to venture out on Wednesday for them  ;D
