HOw do you go about cleaning a flounder?

Here goes:
1) With the white side up, make one diagonal cut completely throught the fish from the back of the head to the forward edge of the anal fin

2) Cut off the tail. Remove the anal fin with a cut starting from the tail end about 1/2" in from the edge of the tail and passing completely through the flounder. It's easier if the cut is angled slightly in towards the body of the fish.

3) Turn the fish around so the tail end is facing you. The removal of the dorsal fin is the most important part of the process. Start the cut at the forward end at a slight angle inwards. Cut through the bones but only down to the dark side. Continue to the end of the tail.

4) Turn the fish over so the skin is facing you. Start pulling the skin from the forward end. It's important to get a good grip on both the body of the fish and the fin with the dark skin still attached.

If this is too complicated, eat the flounder sushi style !!

i dont do much to clean them, cut a small slit and pull out the guts, wash the fish off dip it in flour and pan fry it, less meat is wasted that way, all you do is peel back the skin and eat
