Title: vaccum packed roe

I tried vaccum packing some water hardened single eggs and it worked wonderfully...only one egg popped.

Can I do this with unhardened eggs (ie just procured or boraxed) or will they just all pop? 

Does it work if you freeze them first then vaccum pack?  Do you then need to cut the seal before they thaw?

Any one with any experience?

I vacuum pack procured eggs and only the odd one pops. I have a Foodsaver vacuum that allows me to manually initiate the sealing process at any point during the vacuum cycle. I initiate the sealing process as soon as all the air is visibly removed. I find if you wait until the sealing starts automatically numerous eggs pop while it is trying to extract the last bit of air. I also throw in a bit of borax to absorb any juices released by the few eggs that may pop.

Try feezing them first and then vaccum pack them.

thanks guys...I think I will just freeze them first and get out as much air a possible.
