A few weeks ago, a guest give me couple bottle of Jerk spice that is really tasty....  The brand is called- " Slap yo mama" jerk or louisanina spice.. They worked well on halibut and salmon...  Should give it a try.

HAHAHA - "slap yo mama"  ;D   i've used jamaican jerk sauce for catfish steaks.....very nice!!!

Fry some onions (thin rounds or 1/2 rounds) until just soft.  Then pour in some oyster sauce to heat through.  Pour this (liberally) over your grilled halibut.  You want to enhanse the flavour, not drown it.  Use a walla walla or any other sweet onion.  Don't use a regular cooking onion.  Oh yah, try leaks as well.  Use the white part and save the rest for the leak & potato soup that you will serve as an appetizer. ;D
