Salmon Cakes

1-2 fillets salmon or steelhead (cooked)
1/4 cup diced onion
1/4 cup diced red pepper
2 tbsp minced garlic
1 1/2 cup Panko bread crumbs
3 egg
1/4 cup mayo
Cayenne pepper
Salt & Pepper

Cook onion, red pepper and garlic in a small pan on low-medium heat. 

Mix cooked onion, pepper and garlic with salmon, mayo, 1 egg and 1/4 cup of bread crumbs.  Add cayenne, salt and pepper to taste.

Roll into patties the size of hamburgers.   Scramble 2 eggs in one bowl and pour remaining bread crumbs in another. 

Dip parties in egg the bread crumbs and fry in butter until golden brown.
