Title: fish caserole

I got this recipe from a cook book.
 You can use various canned or left over fish, or freshly poached fish. originally a bass recipe.
heat oven to 350.
 in a smooth edged frying pan, make a white sauce with 2 cups milk, 3 tbsps. of flour, 2 tbsps. butter, 1/4 tsp salt, 1/4 tsp mustard powder, 1/8 tsp white pepper. use a whisk to stir the sauce over a gentle heat. once thickened, add about 3/4 cup of grated Canadian Emmenthal type/swiss  cheese. Stir in the fish. about 1.5 lbs. and also some green onions, or chopped white onion. spoon into a casserole dish, (butter the edges) and add some garlic crutons to the top. bake for 20-25 minutes.
 children might prefer cheddar cheese to the swiss.
