In the dollar store I can get a fishing spoon for $1 or a pair of spinners for $1. I can't really tell what is wrong with them. Has any of you actually caught a fish using those products?

I've seen them before , they don't look half bad but the quality of the hook looks LOW budget

I saw them. They look cheep, likely weak hooks, and didn't have colours to meet the demands of the Vedder and Fraser. Tackle shops don't cost much more, and you get better quality all around.

While I haven't bought any gear from the dollar store, I did buy a pack of spinners that were "less expensive." This ended up not being worth it as the lures fell apart after a few casts. I now stick with better quality lures and I try and support the local tackle stores as much as possible.

ya, I gotta go with rootbeer here, support your local tackle shops. You will get a MUCH better item for a buck or two more.

Aside from the poor hook quality, the quality of the plating will probably be quite poor and will not produce as well as genuine silver, gold or copper plating. If you order spinner components in bulk you will find much higher quality lures for around 1/5 the price of decent quality lures in tackle shops, crappy tire or walmart. As others have said, the quality of the hooks is the difference. That said, however, I prefer the cheap blades for spinners. A light blade spins much easier and quicker in slow currents. You can work a spinner much slower and more effectively with a lighter blade. It's easy enough to paint the blades with laquer or nail polish. I've made my own spinners for the past 60 years and it is a quick and easy process.
However, spoons are a bit different. I want a bit of weight to them so they cast easier. I've made hundreds of fishing spoons from cutting the handle off kitchen spoons I buy at the Dollar store.

They spin ok but I alway have to put weight In front of them because they are so light, I don't like putting on weight so I just stick to rooster tails

those spinners are good for trout in stocked lakes. used on green timbers lake with good success. only thing is they need to be casted with 4-5lb line. blue or green colors worked best.

I've taken a couple of them apart to add shiny beads, and ended up breaking the centre wire. Can I replace it with ordinary metal wire?

you could use any stiff thin gauge wire, no rules against that
you can buy sections of it at some tackle shops with a loop already on one end as well.
