Eagleye
We finished that recipe yesterday and it turned out exactly like you said, we cured it for 48hrs and let it dry over night. I had mentioned in my last post that we had trouble controlling the temp but yesterday everything was fine, I m guessing because it was very cool out yesterday. My wife and I sure enjoy using our smoker and using new recipes
so thank you again for your candy recipe

You are most welcome! :) Glad it turned out good. That recipe works well with all kinds of salmon and especially white spring. Dry Brine Candy Recipe - http://www.fishingwithrod.com/yabbse/index.php?topic=21851.msg216780#msg216780

Yes, thanks for the recipe. I'm going to give it a try later this year, if I catch anything.
