Title: I am disturbed - smoked salmon question

so..I was adding my second load of chips to my true north smoker tonight (about 2 hours into the process), and I noticed a little critter rithing around on one of my pieces of fish. It was about one inch long...and VERY skinny...like .05 mm. It was a worm nonetheless...and it totally grossed me out!

Does hot smoking kill these things?

Am I going to die if I eat this salmon now?

Shoudl I toss the load?

help...I am disturbed...

If you read this article it will explain about smoking fish and also parasites that may be in the fish and how to kill them. Freeze them for cold smoking and for hot smoking the temp must exceed 150 deg.

Page 2 at the top talks about critters.

I pretty much FREEZE all my salmon now BEFORE I brine 'em and smoke 'em.

tecnically I suppose I can freeze it afterward....

It was moving Canoeman....but it didn't look happy....as if the heat and smoke had forced it from its home......

oh well....I guess alot of people wil be getting smoked salmon for Xmas ;)

I will send the two pieces I saw the worms on to our two newest members - the guardians of the Skagit...

When I was a kid I use to throw out every flounder I caught that I found worms in. Needless to say i chuched out a lot of fish. Then a freind of mine who grew up back east saw me chuching out a flounder and I told him it had worms. He resonded with; "So what where I come from every fish has worms in the summer. Freese the fish and then cook throughly I have ate lots of fish with worms in them, never hurt me." I was sceptical so for the next two years every time I Kept fish with worms I would give them to him. Never bothered him so I started eating them too. I am still fine. For a long time I thought only ground fish had worms, untill three years ago when I found two crawing out of a Chum I was filleting. So I freeze and hot smoke them. I haven't had any adverse affects, however Sushi makes me sgeamish.

so seeing as I have already brined and smoked these, would everyone agree that freezing them now will have the same effect as freezing them before?

The worms made their appreance known because they crawled out of the fish....I can't help but think it was because they were not happy with what was happening (warmth and smoke) they are probably all dead already...but if I freeze the fish now for two weeks in my deep freeze..that should finish any other badies off....I hope....

no....it was not...I smoked it fresh....but I assume the freezing now will have a similar effect....its not like smoked worms become more tolerant to freezing.

i hope non of your imediate family read this report lol
but i do no all professional smoke houses require all fish to be frozen when braught in
may i suggest that you now take your fish after freezing them for a few days
and puree the crap (no pun intended) out of them and turn it into salmon pate ;)
vacum bag and dress accordingly for the approaching festive season
keeping a close track of just who exactly you donate this delicacy to

take the worms, put em on a #24 fly hook, go trout fishing in one of the stocked lakes.... ;D ;D

I ALWAYS feeze before brining and smoking for two, really three reasons. 1) does in any parasites as mentioned, 2) breaks down the cell walls such that the brine and smoke penetrate deeper, more efficiently, and 3) who the hell has time to smoke when the fishin's hot?
