A guy I know told me of how to cook white springs...

First you season it up nicely with your favorite spices, stuff it with bread stuffing and squirt a bit of lemon on it.  Then you place it on a cedar board and put it in the oven on 350 for 45 minutes.  After that, take it out, throw away the fish and eat the board...

 ;D ;) :D

I tried the smoke and cook with them last year..pretty good....

take a fillet, smoke it with alder for one hour..then BBQ it with BBQ sauce...it was pretty good.

This year I plan on trying the poor mans lobster recipe.
