I haven't eaten dogfish before but, like Normfish said, be aware of the mercury. I wouldn't let kids or pregnant women eat any.
They should be easy to filet since they are all cartilage and no bones, I guess.

its basically the mercury level you have to worry about.
it is true about the skin, but its not because they're peeing. the skin excretes an enzyme that makes the flesh break down and smell like ammonia, but if i remember correctly, its due more to the spine (on the dorsal fin), than the skin itself.
if you're going to harvest dogfish, gut it , make sure you discard all the inerds, the head and the spine.
you should be able to get away without skinning the fish, 'til you get home.

Ditto what others have said. Don't eat the big ones. The British makes fish n' chips out of them. Make sure you skin the shark before consuming unless you enjoy eating sandpaper.

I've heard they're good when prepared correctly. I've heard something about soaking the meat in lemon to get rid of the "bad" taste. That's all I got for you :-\

gotta soak them in lemon juice for afew hours before eating..and you have to do it fast....

It's suggested that I don't eat any doggies over 2 feet long. I haven't caught many dogfish, but they all seem to be well over 2 feet. More like 4 feet. Is it common to catch any small ones so I can try to eat them?
How serious is the mercury thing anyway? Does anyone know for sure?
