Just cooked up a BBQ full of coho salmon to vacuum seal and freeze for my dog. ( I dont eat salmon) And everytime I cook it I notice the tail section is by far the most moist and tender area. The front half with the bones seems to be less desirable. Just curious what others thoughts are since I can't judge since I don't eat salmon..

Curious to know why you dont eat salmon?
I personally like the tail portion as it does not have any bones lol, but the rest of the fish if deboned tastes all good, I also like the tummy portion, it just tastes a bit different. My parents like salmon head

excluding stuff like the skin and head, which I haven't tried, I like all the standard meat portions. Chefs say the section from the dorsal fin to the gills and down to the lateral line is the best - possibly because it it is the thickest or perhaps also where most of the fats are. However I find the tail section equally tasty.

Belly meat is the fattiest.
The tradition of the heads comes from the idea of using every part of the fish, which is admirable. As did shark fin soup. Unfortunately, with the soup, it somehow morphed into the travesty of shark "finning" that we see today.

The belly meat is a delicacy. Most people leave it. I will happily take someone else's portion of belly meat.

RalphH - Sorry about mis-directing my comment, regarding roeman's dog, to your post. My comment was intended to be directed to spoonman, who is referencing me to being a special kind of douche for insulting a dog. I offer my apologies to roeman's dog and hope it enjoys coho as dog food. Dogs are a product of their owners. I love dogs - not so much owners. Too bad dogs can't read, nor form opinions.

In many countries, dogs have the same food that the family prepares, most of the times they are leftovers, but doesnt mean that those food are derogatory for us humans.......

Tail section.
I don’t like the taste of the fat line that is found along the lateral line in the shoulder to mid section of the fillet. I’ll cut it out before cooking, or scrape it off after cooking.
Honestly, it makes me gag a little…

Tails suck. Cooked the belly is the best by far. The loin is best for sushi. I typically only bother barbecuing the belly. The rest is sushi or smoked and canned.

2 pieces of salmon flesh heaven in every fish.
Deep fried salmon collars would be a close second.

I like Ikura (salmon roe), but I have only eaten it in a sushi restaurant.
