Never tried, but the stave...

Speaking for myself I would target them on the fly when I was starting out, pretty easy fishing with the odd cutthroat mixed in.
-
What setup would you use ? and what would you use for bait ?
-
im targeting them just for a fun little scrap on the 5wt im wanting to try little single egg patterns

I was targeting bulls on the upper Chilliwack today. Managed to land a few rainbows, a nice chunky whitefish, and even a Steelie that snapped his way off. All on different colours and sizes of egg patterns.

--caught lots in the thompson on single egg pattern but they will take most fly's even dry
--similkameen allows bait in winter I think most use maggots so smaller fly on sink tip would work as well.
--most caught on a dead drift
