Heres a recipe[e that is fantastic.
soak your fish in rum (dark preferred for me) for 4 hours and drain
combine 2 parts brown sugar with 1 part pickling salt dash of black pepper dash of garlic powder and some chili flakes to taste
drain the fish from the rum, and put some dry mix on the bottom of your pan
add the fish skin side down and pour the remainder of dry mix on top.
marinated for another 4-12 hours
rinse and pat dry allow the fish to get tacky and smoke to desired doneness.
everybody will love this recipe!

This looks delicious! Do you ever "baste" the salmon while it's smoking?

I save some of the rum that the fish was soaking in and put into a spray bottle. I give the pieces a little misting when I rotate the trays.
Enhances the flavour just nicely - but don't overdo it ;D
Added note - pull the tray out, then mist. Else your smoker may become 'flavoured' as well :D

Rum plus brown sugar and then brushed on.
