Title: Recipes for smoked salmon in main course meals

Have been trying a few main course meals with smoked salmon.

Smoked Salmon Pasta: Make a garlic white sauce and simmer some smoked salmon bits in it so the smoky favour infuses the sauce. Pour over your favourite pasta.

Smoked Salmon Cannelloni: smoked salmon and ricotta cheese (also included yellow bell peppers) packed into cannelloni shells and cooked with either a tomato pasta sauce or a garlic white sauce.

Both are big hits with the kids and my wife. What main course recipes that use smoked fish have worked for you?

Sounds Yummy always looking for different ways to eat the smoked salmon  ;D

How about........smoked salmon spaghetti, with a little cream and tomato sauce, smoked slmo and capers.

In addition, smoked salmon mousse: blend smoked salmon till creamy in texture add lemon juice s&p to taste and a little cream. Add on anything from crackers to eggs.

If you add a litle egg whites instead of the cream, the mouse will harden once cooked thereby optimizing it for fillings such as ravioli or stuffed trout, ect

Is it cold smoked salmon or hot smoked salmon? Red flesh or white? Hot smoked and especially white fleshed is more versatile where you can use it almost a substitute for pork. But just plain cold smoked red fleshed is pretty limiting. Best to just have it as an appetizer imo.

Smoked Salmon Wraps. Chunks of smoked salmon on a bed of chopped lettuce,tomatoes,coloured peppers, topped with mild fresh salsa and sour cream. Served with a pint of "Cutthroat" beer and sunshine.
