Title: Maple Soy marinade
Post by: Apennock on September 01, 2015, 01:37:11 AM
One of my favourite recipes, particularly because it has made salmon a unanimous favourite among my family.   Great for pink salmon if you can't wait to smoke it.

1 cup maple syrup
1/4 cup soy sauce
2 Tbsp brown sugar
1 heaping Tbsp minced garlic
Salt & pepper to taste

I usually do that much for one fish.

Marinade at least 8+ hours.  I usually put it in at night for dinner the next evening.
I usually wrap the pieces in tin foil and BBQ them.  Alternately, tonight my wife baked them which set the marinade really nicely to give them more of a glaze.

On my 'to try' list!  I would have thought this was too heavy as a marinade for 8 hours but I suppose it comes out as a cross between lighter BBQ fare but not that fully dense smoked texture.

Exactly!  It winds up on the chewier side but absorbs the flavours really nicely.
