here is one of my favourite recipies from Japan that i'm sure would be good with any fish from around the world.

Yep, tasty way of cooking.  Mom used to and still does cook fish that way.  I call that technique poaching, but that's just me. Tasty is tasty no matter what the name and homestyle is some of the best food you can get.
