Sturgeon are legally harvested in WA state and some of the meat from the Northen Divine (http://www.northerndivine.com/) operation in Sechelt is seen on the market from time to time-there's nothing wrong with eating fish you know.

I've never tried smoked sturgeon. Is it that good?

I'm a big fun of smoked fish and this is already tempting me.
