Title: Smelt recipes?

Have taken up netting smelt (is that called smelting? :)) and I'm looking for some tried and true recipes to cook the the little buggers.  This is my first year "smelting", and I got quite a haul last night, so I'm looking to try some recipes to see which one sticks for me. 

Maybe some bbq recipes to keep the fish smell out of the house.

There's a ton of recipes on the 'net, but I'm curious what members here like.

Just pan fried and then add a soya sauce. Yummy

They are definitely a very potent fishy smelling fish.  I bought a few dozen a couple weeks back from superstore and deep fried them in peanut oil with simple garlic powder, salt and flour.  Very Yummy.

I tried new recipe last night that was a big hit with my son.

Wet the smelt in a egg/milk wash and roll in a mixture of seasoned bread crumbs, parmesan cheese, and garlic salt.

( and frying the fish OUTSIDE on the on the side burner of my bbq was a big hit with my wife :))

Glad to see you were successful.
That recipe works. I also used to use our campstove on the deck, toss them in seasoned flour first, then egg/milk wash, then panko bread crumbs seasoned with grated parmesan, and fry them in a half inch of vegetable shortening. I used veg shortening because it's solidifies after cooling (very fishy) and is easier to pack up for the garbage.

Here's a simple one, salt and pepper both sides after put in flour then pan fry.

This was how we liked to cook our Oolichans.
I don't remember a real fishy smell from Oolichans though.
Never had Smelt before.
Maybe they come by there name honestly?lol

Eulachon is much tastier than smelts because there oiler

Love eulachon, pan fried and dip in soya and fresh chilli and lemon. So good.

On a separate note, can't find them anywhere on the island for sale. Does anyone where you can get them?
