Title: Xmas shopping for myself: knife sharpening recommendations

Looking for recommendations for a quality knife sharpening system for my fillet and folder knives.

Was at House of Knives looking at a diamond grit system made by Smith, however I am a newb at this stuff.

What works for you? Where does my wife buy it?

Go to Canadian Tire and buy a "Speedy Sharp." I have tried many different types over the years and have yet to find one that works as well and as fast as this one. Sharpens knives like a razor, cheap too, compared to what is out there.

Fine grid Japanese wet sandstone and fine butcher/chef sharpening steel - Isler brand - gets all my knives razor sharp. And I do mean RAZOR sharp.

I have a Lansky Diamond setup it works well enough but is a total PITA to use.

So now I use a waterstone from Lee Valley (http://www.leevalley.com)

 Fast easy smooth and you can put a wicked edge on anything.

If you need a hand getting the angle right use one of these also from Lee Valley.

That's the Japanese wet stone I was talking about. Nothing better than the good old fashion way. :)

As a cook my knifes are my every day tools, I would never ever recommend and grinding "machine" for your knives. They just destroy them and leave them sharp for a short time.
I recommend a wet stone, it takes a little while to get the technique down but it will provide you with the best results.
Any knife shop will have stones for sale, even cook ware stores and as mentioned above lee valley.

Much appreciated all.

So I was showing the female spousal unit this thread and the 1000x stone on the Lee Valley site. She says "Hey we have one of those at work". She works for a charity and someone had donated a waterstone, with the plastic stand, in a large jar of water. It sat in the donation room for the longest time...until today. Clarki is now the proud owner of a new waterstone.

Yes Virginia, there is a Santa Claus.
