Chum salmon rates right up there with Pink Salmon  In order to eat fresh out of the river you do not have to chew it, just gum it and swallow--Chrome out of the salt water the fish has a odd taste with very little flavour except for the spice that is added. If the fish is not to far gone it actually comes out of the smoker not to bad. A lot of the commerially smoked salmon is chum, mainly because it does not have the value of fish such as Sockeye or Cohoe etc. If a person just wants something to eat, and is hungry, Chum will fit the bill. Just my thoughts.
