Title: Keta Salmon?
Post by: fish fishburn on February 10, 2010, 04:55:37 AM
Was in Costco here in Ottawa on the weekend looking for some salmon. The only fresh salmon they had was west coast Atlantic salmon which I will not buy. Then I went to the freezer section and they had Keta Salmon from Alaska. Said to myself Keta Salmon? Never heard of it. So I bought some to try out along with a 24 inch filet of Steelhead frozen. That cost me 16 bucks. Anyhow I get home and google Keta Salmon. Otherwise known in B.C. as chum or dog fish. Nice, isnt a chum a chum no matter where its from? Did the people in Alaska give it this name to make it more marketable to the unknown? Is chum good eating? my buddy from Victoria says he never eats them. I guess I will give it a try and if I dont like it I know my fishing buddy outside will. Hes a 100 lb Alaskan Malamute and goes nuts over frozen fish. Whats your opinion? Thanks in advance.

I've seen on the cans as well. Sounds tastier than "dog".

It's all about marketing. Chums are also sold as "silversides". Pacific sablefish are marketed as Alaskan Black Cod

i hope u didn't pay too much for it...it sucks when they use misleading labels for the sake of marketing.

just like when they advertise our local rockfish as red snapper.

I actually like Rockfish more than Salmon. Chum isn't to shabby too. Those Highliner frozen packages of 4 pieces go down good.

Chum is low fat so it's good for smoking and drying into jerky; not so great on the BBQ because it's pretty bland and dry. Better to poach in wine or bake in foil with lots of seasonings.

Well I tried some tonight for dinner with rice and veggies, and i'm sorry but the dog didnt get any.  It was quite good had some marinade on it.  Looked like oil and ketchup. It was a tad salty for me but had nice texture and was mild in taste. :o

I thought keta salmon was the 6th specie of pacific salmon, the one that is only found in Siberia.

No, unless Dog gets 7th place then it's 6th place.

The "Siberian Salmon", is actually the taimen, not chum.  They get very large.  :o

Chum Salmon=Onchorhyncus Keta

I am glad to see someone knows their Latin names. As for the rest of you who choose to slag this great game fish, they happen to be the highest in omega 3.

I've heard them called "kick" but that's probably just a Ruskin slang not Latin. I think most people get one big Doggie on there line know how hard they are to land though. Dogs generally tire out the fisher after a few hours. Every Dog has it's day to get back at you. Keep your fingers out of the line. :)

I always thought Chum had the lowest oil content and white spring had the highest...

the sixth species of pac. salmon is the masu salmon or japanese cherry salmon isn't it?, anyways chum fight pound for pound better than any other pacific salmonoid, and if the can said coho on the side you'd probably eat it and love it, so what's the problem? chum and pinks are great eating if they're relatively fresh, and I'd take canned chum over fresh steelhead any day which is by far the worst tasting silver fish I've ever experienced

I heard of a Cherry Salmon being caught in the Cowichan once-a guy had no clue what it was took it to fisheries they ID'ed it as a Masou Salmon, I guess that fish took a wrong turn/was dropped on his head as a Smolt.

There actually is a true species of Pacific salmon, that are only found in Asia.

They are known as Masu or Cherry salmon.

years ago a commercial fisherman friend told me that chum smoked the best. I didn't believe him thinking nothing could top a sockeye; them one year I smoked both and did a taste test. Chum are the best smokers.

The young cherry salmon look a lot like a Steelhead smolt...
When older they look a lot like a pink.
Definitely a cool fish though... might have to give em a try one day.
