I've always cooked large trout as I would salmon.  I would assume steelhead would taste even more like salmon than large rainbows do.

Cook them the way you like your salmon or trout,i find there isn't much difference in the taste, the main thing with steelhead is they have bigger bones.Enjoy CS.

Technically SK, that's actually called a cerviche.  You use the acidity in the citrus to "cook" the fish without using any heat.

i find the best way to eat steelie or salmon is i cut into 1inch and half steaks then on the barbecue they go cook on low to med heat puncture steak with knife and put little pieces of onion in the meat brush olive oil over the steaks basil squeezed lemmon and montreal steak spice cook just like a beef steak so you can see the grill marks on each side  rice and asperagus tips are good complements and of course a beer

one of the recipes I use is :
                                     steelhead
                                     soy sauce
                                     oyster sauce
                                     lemon juice
                                     butter
then pour sauce on fish and put in oven till done take out and enjoy .
