Title: Any recipes for salmon cakes.

We had a great baked salmon on xmas eve, but now i have a bunch of leftover baked salmon.  Was thinking of making some fish cakes but i cannot find a great recipe.
Thanks for the help( ps i froze the leftovers so they would not g to waste)

left over salmon (remove bones and fork mash)- 2 cups
left over mash potato- 2 cups
left over carrot ( diced), peas, corn.
1/4 Parmesan cheese
2 eggs
heavy cream
salt and pepper
flour

if you have a cake mixer use it!!!

1. beat eggs with Parmesan cheese and potato in med/high speed
2. turn mixer to low, slowly add the salmon and mix veg ( salmon first, veg last)
3. if the mixture is too runny, add flour til it thicken; or add heavy cream when its too thick. ( should be like a very wet stuffing)
4. scope a couple spoon full and shape it to a patty and dust both side with flour.
5. pre heat a skillet with enough oil
6. shallow fry them til golden brown on both side.
7. season with salt & pepper  while the fish cake is resting.
8. serve it with a home made tartar sauce and lemon wedge.


Home made tartar sauce:
mix in mayo, chopped capers, dill pickles, squeeze of lemon juice and mix them well together..

Thanks for the recipe and the tip on the cake mixer, the mixer blended everything perfectly and all the cakes stayed together while frying.  My wife is even having the leftovers for lunch, and maybe she wont complain when i escape for a weeks salmon fishing later in 09 ;D
