how do you cook your hali , not "fish n chip " though :-\
-
a bunch of lemon juice a little pepper and a little salt then just throw it in the oven
-
I do mine with a little salt, Pepper, Old Bay, lemon Juice, and then I coat it with a mix of crushed almonds and corn flakes.
I do a real quick fry in Very Very hot olive oil, and then put the whole pan into a oven on broil for another 12 minuets.
I then make a sauce from sweet chili sauce, and add just one or two drops of Worcestershire sauce, warm it up and driizzle over the Halibut.
YUM YUM!!!!!

Usually we just marinade ours in kraft Sundried Oregano dressing, then fry it on the bbq. It is the easiest and tastiest halibut recipe I have ever found.
You can add some lemon in there too.
-
cover the fillet with bread crumbs and then pan sear it in olive oil

Has anyone tried smoking Halibut?
-
that would just be a waste. cost alot of money to get hali and to smoke it would be a waste.
-
Waste? haha
I caught my two hali in area 9-1 three weeks ago . A 58lber and a 75lber. Tastes good smoked cajun style !

O smokin halibut I tried that about 2 years ago I love halibut and I have smoked some very yummy salmon over the years I dunno if it was just me but when I smoked halibut it was so awful. I used my normal salmon brine and it did not do well, so if you gonna try smokin the might white meat id suggest doin a very small batch cause if you have my luck it will go straight in the garbage

Candy Halibut from St. Jeans Cannary is very good and worth a try.. I personally like my Halibut plain and simple, pan sear in butter with a light seasoned flour coat to lock the juice in.. Make sure you don't over cook them, they will turn into cardboard and you might as well feed it to the dog.

Italian or some form of oil/vinegar dressing works great and it's easy. Marinade in a pyrex dish and you can cook it in the same dish that you marinade in. Bake, broil, or barbeque after marinading for 4hrs minimum. Don't over cook.
Smoked halibut can be dry. If you pour marinade over the smoking fish it will come out great. Use cherry wood with a hickory finish. Not much brown sugar but lots of peppercorns, onions, and garlic. Dry rubs work if you let the rub set first and then marinade the fish while smoking.

Hey James,
If you like a Thai flavour, I've got a good one for you.
I mix 2 tbsps of Green Thai curry paste, breadcrumbs, ground almonds, 1/2 tsp sesame oil and finally a little shredded lime rind. Pack this onto the fillets and bake in the oven.....mmmmmm. I think I need to go take out some halibut!
Good luck.

Had hali left over from last year, smoked it then canned it everyone loved it.
-
halibut and bacon! Substitute halibut for scalops and wrap the hali chunks in bacon then toothpick and fry them
-
Put a large filet in a microwave dish, slice some cucumber into it, pour creamy cucumber dressing over it, cover with plastic wrap and microwave for 11min. Quick and easy, if there are any leftovers make fishcakes out of em.

Parmesan Breaded Halibut Cheeks with Rosemary White Bean Soup. Serves 4
Here is a favourite I do for my wife and kids. It looks really fancy but only takes about 30 minutes from prep to table. You don’t have to be exact with the measurements.
Cheeks
Halibut Cheeks (4-6 ounces per person)
1 or 2 eggs beaten
Flour seasoned with salt & pepper
Paprika
Fine bread crumbs
Grated parmesan cheese
Oil for frying.
White Bean Soup
2 cans of Cannellini Beans (depending on how many people)
2 chopped tomatoes
½ onion chopped
1 clove garlic – chopped
1 sprig of Rosemary
1 – 2 cups of chicken stock
¼ - ½ cup of white wine.
Salt & Pepper
Put enough seasoned flour on a plate to coat the cheeks.
Place beaten eggs in a bowel
Mix parmesan cheese with bread crumbs (I use a ratio of 2 parts breadcrumbs to 1 part cheese).
Dredge cheeks in flour, then dip in eggs and roll in bread crumb mixture, then sprinkle a little paprika on them and set aside.
Next prepare the soup.
Rinse beans in cold water and drain.
Sweat onions in a frying pan, then add chopped tomatoes and garlic – cook a couple of minutes taking care not to burn the garlic.
Add beans, then white wine and cook off the alcohol
Add chicken stock, bring to a boil and simmer a few minutes to blend flavours.
Add rosemary and season with salt and pepper.
Keep warm until ready to serve.
In a medium hot frying pan, add oil and wait until hot.
Fry cheeks a few at a time (about 2 minutes per side) and keep warm in the oven.
To serve:
Ladle soup into shallow soup bowels making a mound of beans in the middle so you can place the fish on them.
Put a few cheeks on top of the beans, garnish with parsley is desired and serve.

Marinade for 30 minutes in garlic, lime juice, lime zest, salt, pepper, a bit ot tequila (preferably the darker stuff) and canola oil.
Take it easy on the tequila. You shouldn't really taste it but you definitely miss it if its not there!!
Grill quickly on a very hot grill. Yummy!!
