anyone willing to share his favourite smoked trout recipe with me?

I like adding a bit of teriyaki sauce to the marinade for that hint japanese zest

I just put the fish in the smoker with no brining an smoke for about 90 minutes with apple
at 220 degrees then another 1 hour or less depending on the size of the trout.

I just did a batch a few weeks ago.

I through everything i could think of in the brine. Marinated for 24hrs, let dry for 6, then smoked for 8 with the door open a crack on the smoker. Turned out great. It was my first time smoking fish so i was happy.

Hey RossP
I have never tried smoking without using salt. Do you have to eat it quickly or will it keep in the frige for a fairly long time?

Smoked Trout never last long around here. I smoke it and it happens to disappear right after I remove it from the smoker. Did up three yesterday, will post pics later and they were gone in no time. Also happened to smoke up a few other items yesterday. I will post when I download the pics from the camera. Bacon wrapped chicken breast, Rainbow Trout, Stuffed jalapeņo peppers and Chicken Jerky mmmmm good.
