I don't like sushi. I LOVE it.
Have made my own from salmon and prawns. Fresh caught is so tasty, we do it right on the boat ( salt water only), Some people say salmon should be frozen first but i have been OK sofar. I bring my own "sushi box" on board. I would like more info on safety of salmon if anybody knows more. ' :P'

What I have learned from the various sushi making courses that I have taken is as follows - shallow water fish is more dangerous than deep water fish. The particular nasty "sushi worm", who's scientific name I cannot recall at the moment lie in little curled balls between the muscle fiber of fish meat. There are alot of them in rockfish. (I bought a rockfish fillet at Steveston, and it had a total of 8 or these worms in it - thank god I cooked it). I wouldn't eat salmon raw unless it was flash frozen.
I have eaten scallops (actualy eaten them underwater while scuba diving......now that is fresh!)
Tuna right off the fish on a boat, and shark.
Other than that...and octopus, I would think twice.

I'm glad someone brought up the roundworm issue. Roundworms are extremely common in pacific salmon. It is rare that i catch one that doesn't have at least one visible in the flesh after i fillet it.
I am no expert, but i believe Anisakis simplex is the most common in our salmon.
Before anyone freaks out i'd like to point out that these parasites are not poisonous. People eat them all the time. The dificulty arises when people consume an infected fish raw. To do so safely the fish should be frozen at - 20°C for 60 hours. That will kill all worms. The other option is to cook the fish. It takes only 1 minute at 60°C to kill the worms. Remember that the entire mass should be at that temperature, so for example a fillet 3 cm thick would need to be cooked for at least 10 minutes at 60°C for the entire piece to reach a temperature high enough to be safe. Salting and marinating does not kill them, neither does cold-smoking.

The problem really arises when our little friend the round worm is taken from his cool, protien rich environment, and suddenly placed in a warm acidic bath (your stomach - if eaten raw). Then, said round worm panics, and tries to make a B-line to the outside world - through your stomach wall. Painful, and never a real party treat. Nothing like the guy on the end of the table exploding like that dude in alien to kill the mood.
Cook or flash freeze it, or your are in the risk zone.

I wouldn't eat any raw fish period. It's not just the worms and parasites, the bacteria alone is more scary. Did you know that Japanese people have the highest rate of stomach cancer in the world?

I pigged out on sushi a couple of times when I was in Vancouver recently. It took a little doing to gag down that first taste of absolutely raw tuna and salmon, but I did it, and it was OK. And I wasn't hungry for a long time after that. I'd do it again, but if you ask me, raw salmon and tuna don't have nearly as much flavor as it does after a short trip through my BBQ. I'm not talking about adding spices, sauces, or any seasoning at all--just throwing it on the grill and waiting until it is barely cooked all the way through.
On the other hand, next time I go fishing with my brother-in-law, the first trout I pull out of the water I just may start gnawing away on it right on the spot just to gross him out.

My mom makes me make it all the time. They aren't that daring so I just make California roll. Everyone in my family loves it, my dad, not so much.

Traditionally soy sauce was used to weaken the "raw" flavor of the fish. Also, wasabi has bacteria eliminating properties. Try a google search on "how to eat sushi". Most sites will say not to dip the rice, but the fish side(we're talking sushi with the ball of rice and slice of fish on top -"nigiri") This may change how sushi tastes for those of you who do not eat it this way already ;D

I am under the impression that most spices, such as kurrie, were used to hide the bad smell and taste of rotten food because back in the day there was no refridgeration.

I once went to a sushi place because I was trying to impress a super foxy blond chick and I mean she was on fire! so anyway I ate all this raw food including salmon but I drew the line at roe :P personaly I think raw food is just that, raw food.Deep fry the damn thing and we can talk.Oh ya it wasnt worth the effort if ya know what I mean :(

Hmmmm...Rod your pic isn't showing for me.
Anyhow not sure if you'd call this sushi...but on a Winter steelhead trip over on the Stamp many years ago....my buddy and I had fished the morning away and after slogging through a foot of snow on the way back to camp we came across a fellow angler we knew also camped. When walking up to pay a visit and see how he'd made out fishing, we both are stopped dead in our tracks by this absolute mouth watering smell coming from his camper van. Both thinking of a heaping pile of bacon and eggs, we pop our heads into the camper van announcing our presence and if he had some extra breaky for us. After a quick "morning fellas", he said sure there's lots and removed the cast iron frying pan from his stove top to show us 2 big fresh sizzling strips of steelhead roe. "Got this one this morning, I don't mind sharing", he said with a wily grin. Well my bait box (of steely roe) was on my hip and you can't image how fast our appetites quickly waned. We both abruptly stated (trying to hide that we truly were starving) that we were joking and wouldn't want to intrude. He just chuckled and slipped the frying pan back onto the stove. I can still hear him laughing after we headed off to camp for breakfast.
When we got to camp and told my buddies dad, he laughed so hard and said, "bet you guys were shocked". So for those who relish a breakfast of fresh pan fried steelhead roe, dig in...I'll stick to bacon and eggs. ;)
Oh and I do like sushi, with lots of wasabi and ginger.

Favorites are:
Sockeye Salmon, home made – Atlantic is all fat with no taste
Uni – Sea urchin, especially fresh right out of the shell
Hamachi – yellow tail
Mirugai – geoduck
Amaebi – Sweet shrimp
Ikura – salmon roe
Unagi – eel
Aji – Horse mackerel
Steak – blue rare
Nothing like pure fish without globs of spices to cover the true taste (YES, challenging). Just dip the sashimi in good soy sauce and add a little washibi on top.
p.s. For those making washibi from powder use only clean cold water, DON'T mix the powder with soy sauce unless you like bitter green glob. Make only as needed. Anyone know why overnight Washibi losses it's taste.

Well in Japan I've eaten just about every wierd type of food known to man.
How about sashimi whale? I know some might balk and cry but I had to order some to see how it would taste. Not bad but not again.
An other was sashimi chicken!! I ate it once but was a little reluctent cuz I was worried about salmonelia.
I'd say my best fish for sashimi is taro (tuna belly with lots of fat), adji, hamachi, suzuki (seabass) and Anago (salt eel).

Being Japanese, I grew up eating the stuff. Favorite? Probably Uni. Although raw ebi also is delectable. Tuna and salmon seem so blase nowadays. I remember in elementary school, it was considered strange and now some schools actually serve the stuff!
I don't think Wasabi loses its taste so much as it loses its kick. I find the powdered stuff tends to lose potency pretty quickly after mixing. Also, the powdered stuff seems to go stale even before you mix it if you've had it awhile. The stuff that comes in tubes (pre-mixed) seems to hold its kick a lot longer but it's more expensive in the long run.

In Japan, school children must bring a stool sample to a school every 3~5 years or so for the parasite check-up. Teacher hands you this high-tech looking transparent plastic film with the bulls-eye printed for the lab-tech., to aim the microscope. At the comfort of your home bathroom, one sandwiches the match head sized stool and sandwich it between this film.
In grade 5, a naughty kid broke in to the teacher's file cabinet, and found out that one boy out of entire grade 5, got a positive. The name, the worm guy, stuck to him till graduation. Poor kid.. :'(
And the urban legend goes..
One day, this kid couldn't do his business and no sample to hand in. He was afraid to get in trouble with the teacher, so he picks up the stray dog's poop found on a street and hand this in. Few days later, teacher call his mom and says, " Your son is very very sick, what the hell are you feeding him!!???"
